Fiesta Turkey Meatloaf

Ingredients
- 40 ounces 97% Lean Ground Turkey
- 1 can Diced Green Chilis
- 1 whole Chipotle Pepper
- 1 whole Onion Rough Chopped
- 1 whole Poblano Pepper Rough Chopped
- 2 whole Jalapeno Peppers Rough Chopped
- 2 cloves Garlic Peeled and lightly mashed
- 1 tbsp Fajita Seasoning
- 1 cup Red Enchilada Sauce
- 1 large Egg
- 1/3 cup Panko Bread Crumbs
Instructions
- Preheat your oven to 365 degrees.
- Add the onion, garlic fajita seasoning, and all the peppers to your food processor. Pulse 10 times in 1 second pulses
- In a large bowl, add the vegetables, the ground turkey, the bread crumbs and the egg. Combine thoroughly.
- Add the mixture to a meatloaf pan and top with the enchilada sauce.
- Bake at 365 degrees until the internal reaches 165 degrees
