Fiesta Turkey Meatloaf

This zesty take on the traditional meatloaf is a great macro-friendly change of pace for meal prep or a weeknight meal.

Ingredients

  • 40 ounces 97% Lean Ground Turkey
  • 1 can Diced Green Chilis
  • 1 whole Chipotle Pepper
  • 1 whole Onion Rough Chopped
  • 1 whole Poblano Pepper Rough Chopped
  • 2 whole Jalapeno Peppers Rough Chopped
  • 2 cloves Garlic Peeled and lightly mashed
  • 1 tbsp Fajita Seasoning
  • 1 cup Red Enchilada Sauce
  • 1 large Egg
  • 1/3 cup Panko Bread Crumbs

Instructions

  • Preheat your oven to 365 degrees.
  • Add the onion, garlic fajita seasoning, and all the peppers to your food processor.  Pulse 10 times in 1 second pulses
  • In a large bowl, add the vegetables, the ground turkey, the bread crumbs and the egg.  Combine thoroughly.
  • Add the mixture to a meatloaf pan and top with the enchilada sauce.
  • Bake at 365 degrees until the internal reaches 165 degrees
